Missing microphone documentation

For the Enviro (non-Plus) pHAT, the documentation fails to mention a required dtoverlay, which has cost me an annoying amount of time to troubleshoot.

The fix is to document that the noise sensor requires the adau7002-simple dtoverlay, or to provide a more helpful error message than missing device.

at least on the board that i have i've not been able to detect any sound however, the spectrogram doesn't react to tones
