Some confuses about the Jacobian

I have some problems about the Jacobian in the contexts, the Jacobian in the text always corresponds to one order polynomial function, but in the code, there is also two order polynomial example, while the stiffness matrix and mass matrix still use one order polynomial function's Jacobian to calculate, is it correct?
